Gluten free and vegan sandwiches

So recently I made some gluten free and vegan bread.

I have to admit, it doesn't taste too good. It has a strong gluten taste. So now what do I do with it. Let's try making sandwiches.

So I grilled some eggplant with Greek spices for just a couple of minutes.

Added some lettuce and tomato, Vegannaise (vegan mayo), and some Dijon mustard.

Not too shabby....it was pretty good.

This is one of my favorite sandwiches. It's classic and easy.



Add some homemade potato chips, a salad, rice or soup and you are good to go.
