Twice baked potato
These is not a side dish that you can pull off in 5 min. It's not a hard dish to make, but you'll need about 45 min for baking time.
You first need to bake the potato. When they are soft, slice them in half and scoop out the inside. You don't have to scoop out everything. Leave a small rim around the skin.
Add in Earth balance and brown sugar. Mix.
Put the mixture back into the potato and bake again with melted vegan cheese on top.
I put avocado on top but you could mix it with anything...cranberries..raisins..or nothing.
