These are pickled beets. Now, there is a super easy way to pickle beets or any veggies.
Just boil the veggies to the softness that you like.
Pour in 1/3 cup or 1/2 cup of rice vinegar. Depends on how strong you like it. Then pour in enough water to cover them. You can also add sugar if you like.
Then keep in the fridge or freeze.
They are a really easy side dish to pull out when making more complex meals, or they can also be great in salads, wraps, or sandwiches.
