Crispy....yumm

 This is roasted potatoes with tofu and chickpeas. I just rubbed them in olive oil and Greek seasoning that I got from Costco. Then shoved them in the oven. I recommend 425 or broil them.

* Note: the potatoes were already cooked. This made roasting them fast. You can cook the potatoes at the start of the week and have them in the fridge. This will take time off of your cooking during the week.

After roasting them for 20 min everything is nice and crispy.
