I've blogged about using lettuce leaves or cabbage leaves as wraps before. They are just such an easy way to use up veggies in the fridge. Just toss everything in as a stir-fry and use the cabbage leaves as a wrap. They have a half lettuce, half cabbage flavour. They are mild in taste, and firmer to hold your food than lettuce. Plus they are pretty cheap.
The veggies in my wrap are purple cabbage, a few cherry tomatoes that I had left kicking around in the fridge, mushrooms, pine nuts, parsley, vegetable stock, and a bit of oil, and garlic.
