Before I forget to blog about this, I wanted to talk about soaking rice noodles. If you like Asian style of rice noodles they are gluten free, vegan and super easy to make. This style of rice noodles do not boil. You need to soak them in cold water. This is something you can throw into a big pot of cold water before you leave for work, and they will take 5 min to cook up for dinner when you get home. If you haven't soaked them you can put them in boiling water, but don't leave. Let them stay in for maybe 20 or 30 seconds. If they stay too long they will turn to mush.
After soaking your noodles you can start cooking. Grab a wok or frying pan and put oil, garlic, soy sauce, and throw in the noodles, just cook long enough for them to absorbe the sauce and cook them until they are your desired of softness. This wont take long. 5 min. You can then sprinkle bean sprouts on them if you like.
If you want to make this a meal and not a side dish, stir-fry veggies and tofu/meat and then add the noodles at the end.
